Development of edible biofilms with marine organism extracts for food application
Edible coatings are one of the more efficient, cost effective and environment friendly solutions regarding minimally processed products. An effective formulation will control gas and water vapor transfer, promote surface sterility and retain volatiles. The objective of this project was to develop the formulation and application process of edible coatings, based on ingredients extracted from marine organisms, with application on quality preservation in minimally processed fruits and vegetables (patent pending 107369).
