Optimization of the process of obtaining honey powder  

Honey is currently commercialised at reduced prices, making it imperative to find alternatives that make national bee farms viable. Given the needs of some businesses and the perspective of consumers, honey powder is already being produced in some countries. However, in the existing products on the market, the additive/honey ratio compromises the value and commercial interest. Polytechnic of Leiria has developed a formulation using the addition of sodium alginate, obtaining a product with a high amount of sodium. This project aims to optimize the process of obtaining honey powder, using natural additives that can originate a similar product without high amount of sodium.
