ProReMar – Marine Resources-based Food Products

Abstract/Aim
The research project ProReMar (Marine Resources-based Food Products) aims to the sustainable valorisation of marine food resources from the coast of Peniche, through the development of new food products from fish, mainly with low or without commercial value, and the addition of marine algae rich in bioactive compounds and minerals. The aims of the project will be reached through the study and development of 3 new products addressed to the general public (children, adults and elderly), including people with optional food restrictions (vegan). These products are expected to show nutritional characteristics of interest to the consumer and to be widely accepted in sensory tests to end consumers.
